「阿房宮」干し菊（南部町産）と、「赤菊芋」（青森市産）を使用した爽やかなレモン風味のピクルス。
赤菊芋は、水溶性食物繊維イヌリン含有が特に多いのが特徴です。
成分が溶けだしたピクルス液はレモンピール入り。飲むお酢としても美味しく頂けます。
血糖値が気になる方には特にオススメです。

＜赤菊芋とは＞
キク科ヒマワリ属の多年草でショウガのような根茎部分を食用に。他のイモ類と違いデンプンはあまり含まれずカロリーも低め。
主に「白菊芋」が流通されており赤菊芋は特にイヌリンのほかカリウムやリノール酸、オレイン酸などが豊富。
イヌリンは消化されるとオリゴ糖に変わります。
